Sweet Potato Peanut Curry Soup
"Two of my faaaaaavorite things to eat are soups (yay!) and curries (double yay!) so this Sweet Potato Peanut Curry Soup recipe is definitely on my NOM NOM NOM list. That is to say, you should totes make it because: DELISH. The recipe makes a really thick and decadent soup that can totally fill you up for a full and satisfying meal - but you could also drop in some protein like chopped chicken and serve it over rice or cauliflower for more of a saucy or stewy (I think I just made up that word) effect."

I used the vegetable broth for this, since canned beef broth tastes a little bit odd to me - it can be really salty and sometimes has a strange "tinny" aftertaste. It turned out really good and it is so healthy! I have been seeing this peanut powder product popping up in a lot of recipes lately, but it is not yet available where I shop. So I just used regular peanut butter.

I don't usually like recipes with peanut in it, but my whole family loves soup and we love butternut squash too, so this seems like a great recipe to try! We eat alot of vegetarian meals, so I would use vegetable broth and add a salad and crusty bread to make a great meal! I often add red lentils to soupd to boost the protein as well!

Our family tends to follow a fairly low carb diet so I am always on the lookout for new and interesting sweet potato dishes and, wow, this one is a real goodie! We used chicken stock (because that is what we had) and fresh garlic but made no other changes to the recipe. We had it with crusty bread, there is a gentle but delicious Thai flavor in the background and it is very very good.
