Hungarian Creamed Spinach

Ingredients

  • 1 kg fresh or 500gr frozen spinach
  • 2 tbs oil
  • 3 tbs flour
  • 200gr milk or water
  • 1 to 4 clove of garlic
  • 1-2 eggs
  • half a bread roll (optional)

Instructions

If using the bread roll, soak in liquid. Make a light roux from the oil & flour. (Cook flour & oil - continuously stirring - until light brown) Add garlic. Add liquid (after removing & squeezing out bread roll) and stir until smooth. Add spinach, salt, pepper. Add crumbled breadroll and cook on low flame 10-15 minutes, until thick. Lightly beat the eggs and stir in to spinach mixture, continuously stirring until set.
