Parmesan Sweet Potato Cakes
"These Parmesan Sweet Potato cake are savory and cheesy, a bit smoky, with a touch of sweet. A tasty and hearty side dish – or even a main course for a meatless Monday. First grate some fresh onion in the food processor, then place it in a colander to drain off some of the liquid. Next grate the sweet potatoes and add them to a large mixing bowl. Then mince several garlic cloves, chop some green onions and add them as well as salt, pepper, smoked paprika, Parmesan cheese, and eggs. Give it a good stir and start frying up the cakes. Plate them up with a dollop of sour cream, and garnish with some green onions."
