Spinach and Ricotta Lasagne
"Lasagne is the best pasta. I love proper lasagne with the ragu sauce – the ultimate comfort food, the best cheesy, bubbly, meaty carb fix, not much can beat that. But veggie lasagne needn’t be boring either – you can make it with aubergines, courgettes and a good tomato sauce – or with spinach, like here. It doesn’t take long to make – true, perhaps it’s not a weekday dinner when you come home from work, but you can make two or three trays of the stuff and happily freeze them."

I love the sauce that is used in this veggie lasagne. That is always the key to it. I've ordered this at restaurants many times, and very few of them have a really good sauce. That seems to make all the difference. I think most restaurants use a jarred bulk alfredo product. Mushrooms would be great in this, but I would saut them first so they don't make the sauce watery.

This is exactly my kind of lasagne! We always have spinach growing in our garden so that means we use it fresh, straight from the veggie patch and the combination of fresh spinach with ricotta, blue cheese, mozzarella and parmesan sounds like heaven on a plate, lol! Its also so quick and easy to make which makes it perfect for a week night dinner. Does anyone have any ideas about a no carb version? I am wondering about using sliced zucchini instead of pasta and would love to hear what you think?
