I love potatoes. So, I was really happy when I found this recipe to try. I have never had potatoes like this. They were creamy, crunchy, and cheesy! They smell delicious while cooking, and I just knew these would be good. I wasn't disappointed! The only thing I did different was to use potatoes that I had shredded instead of frozen hash browns. It came out perfectly!

The children voted this Gooey Potato Bake to be Lip Smackingly Yumlicious, lol! I am not a fan of ready make soup as a sauce (to me it always tasted like Soup) so I used some chicken stock instead and we LOVED the sour cream in the sauce. It really is good and I will definitely be making it again often.

Oohh,these potatoes look so delicious. I love the idea of substituting cream of chicken for cheddar cheese soup. I like to use homemade or fresh as much as possible to cut down on the preservatives, so I think I will adapt your recipe to cook long enough for raw potatoes. Thanks so much for the idea!

This recipe looks delicious and would be perfect to bring to a potluck or family dinner. This is a great side dish to go with turkey, meatloaf or roast chicken. I wonder if you could substitute a different kind of canned soup like cream of broccoli or even cheddar cheese soup? Sounds delicious either way!

I think I like the idea of bread crumbs better than cornflakes. The recipe calls for two cans of cream of chicken soup. Is it the ten ounces condensed cream of chicken or ready to use and, if so, what size? I can always use more potato recipes. And I grow my own potatoes. Would it work if I just cubes and cooked my own instead of using hashbrowns?

I've been making these for church potlucks for years but I never knew they were called funeral potatoes! lol One tip, though, make sure you do cook them thoroughly. It's easy to think they're done, but they're still cold in the center. They must get bubbly or they're not hot enough. You can cover the top with foil if you think the top is getting done too fast before the inner casserole. You could also use a larger casserole dish and not make the potatoes so thick.
