Chicken Under The Skillet
"Chicken thighs stuffed with chorizo and garlic, cooked under a skillet. The classic version of this dish features a brick and a whole de-boned chicken. The concept is genius and the taste fantastic. Super crispy skin, maximised flavour and the add-ons stuffed under the skin (prosciutto, cheese, herbs) completely melted into the succulent chicken meat. This is an easy, dumbed-down version: no need for a brick, chicken in portions and just two regular skillets: one under, one on top. You can cook the chicken in batches and then finish it all together in the oven. Two-skillet dish!"
