- 10 large eggs
- 1 cup whole milk
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 2 cups chopped fresh arugula
- 1 cup shredded Yukon gold potatoes
- 1 cup grated Gruyère cheese
- 1 cup grated cheddar cheese
- 10 ounces chopped cooked sausage
- 1 cup chopped fresh chives
