I made this recently and it was excellent! The only thing I would recommend is adding one or two chopped cloves of garlic to add a bit more flavor.

Champagne would certainly elevate this dish and give it an elegant, expensive fancy restaurant taste, but if you don't have any on hand or don't want to open a bottle just for a cup to cook with, a dry white wine will do. If you don't want any alcohol, try a white grape juice or a sparkling white grape juice.

This dish looks like a great Friday night dinner! I love shrimp, I can't wait to try this out.

I love risotto and I recently made it for the first time, so I will certainly need to give this version a try.
