    Ingredients

    • 4 cups cauliflower florets
    • 1 cup diced ham (pork or turkey)
    • cream cheese, softened
    • 1 cup Greek yogurt
    • 1 tablespoon Parmesan cheese, grated
    • Salt and pepper, to taste
    • 1 cup grated cheddar cheese

    Instructions

    1. Preheat oven to 350 F.

    2. Boil the cauliflower florets in a saucepot for 5 minutes. Drain and place aside in a colander.

    3. In a medium-sized bowl, combine the cream cheese, yogurt, and Parmesan.

    4. Stir in the diced ham.

    5. Grease a casserole dish with some cooking spray.

    6. Transfer the cauliflower to the casserole dish. Top with cream cheese mixture.

    7. Sprinkle the cheddar cheese on top. Bake the casserole for 30 minutes.

    8. Serve gratin warm.
