NotesCooking Just for Two? The leftovers freeze perfectly! Allow the cooked pockets to cool completely. Wrap tightly with plastic wrap and freeze for up to 3 months. When ready to serve, you can reheat them straight from the freezer (no thawing necessary). Place on a baking sheet in a 350 degree oven until heated through (about 20 minutes).

These look delicious, and a great improvement on the store-bought Hot Pockets. I'm a positive addict when it comes to cheeseburgers, especially bacon cheeseburgers, and this recipe is definitely going to get a workout in our house. This would be ideal for when our grandchildren come to visit and any semblance of a schedule goes out the window. I would think that after being cooked, one could easily reheat them in the microwave.

These Bacon Cheeseburger Pockets are just fun to make and fun to eat. They are quick and easy to make, and just a great twist on hamburgers for dinner. You must serve these with french fries to add to the "dipping in ketchup" fun. I'm going to try this recipe with mozzarella cheese and sliced pepperoni and see if it becomes a "pizza pocket" when dipped in marinara sauce.
