Peppermint Brownies
I absolutely love the combination of chocolate and mint, and these peppermint brownies are no exception! They are so cool and delicious...even when they're warm...that I can never eat just one. You won't be able to, either!

Ingredients
- 3 sticks butter or margarine, melted
- 3 cups sugar
- 1 tablespoon vanilla extract
- 5 eggs
- 2 cups all purpose flour
- 1 cup cocoa
- 1 teaspoon baking powder
- 1 teaspoon salt
- 24 small (1 1/2-inch) peppermint patties, unwrapped
Instructions
- Heat oven to 350F degrees.
- Grease a 13"x9" pan.
- In a large bowl, stir together margarine, sugar, and vanilla with a spoon.
- Add eggs, and stir until well blended.
- Stir in flour, cocoa, baking powder and salt; blend well.
- Reserve 2 cups of batter.Spread remaining batter in pan.
- Arrange peppermint patties in single layer over batter, about 1/2 " apart.
- Spread reserved 2 cups of batter over patties.
- Bake 50-55 minutes or until done.
- Cool completly in pan on wire rack; cut into squares.
